Ingredients:
- 1 tbsp extra virgin olive oil, plus extra for drizzling
- 2 large garlic cloves, thinly sliced
- 400g tin chickpeas, drained
- 400g tin chopped tomatoes
- 400ml/14fl oz chicken stock
- 50g/1¾oz small pasta shapes
- Freshly ground sea salt and black pepper to taste
Method:
- Sauté the Garlic:
Heat the olive oil in a medium saucepan over medium heat. Add the thinly sliced garlic and cook gently until softened and just beginning to brown. - Add Chickpeas & Tomatoes:
Stir in the drained chickpeas, then add a generous pinch of salt and pepper. Pour in the chopped tomatoes and chicken stock, and bring the mixture to a boil. - Cook the Pasta:
Add the pasta shapes to the soup, then reduce the heat and let it simmer for about 15 minutes, or until the pasta is tender. - Season & Serve:
