Ingredients:
- 150g wholewheat tagliatelle (or spaghetti)
- Olive oil, for frying
- 1 large leek, thinly sliced
- 200g baby leaf spinach (or frozen spinach)
- 200g mushrooms, thickly sliced
- 2 garlic cloves, crushed
- 150g silken tofu
- 1 tbsp light soy sauce
- Salt and freshly ground black pepper
Instructions:
- Cook Pasta: Boil the pasta in salted water for 10 minutes or according to package instructions. Drain, reserving some cooking water.
- Prepare Leeks: Heat a splash of olive oil in a pan over medium heat. Cook leeks until soft, then set aside.
- Cook Spinach: Add a bit more oil to the pan, increase the heat, and cook spinach until wilted. Drain excess moisture.
- Sauté Mushrooms: In the same pan, heat more oil and fry mushrooms until caramelized. Add garlic, then return leeks and spinach to the pan.
- Make Sauce: Blend silken tofu with 3 tbsp reserved pasta water and soy sauce until smooth. Pour into the pan with the mushroom mixture.
- Combine: Add pasta to the pan, toss to combine, and season with salt and pepper.
