Leek and Zucchini Soup with Sour Cream, Dill, and Homemade Croutons

This delightful leek and zucchini soup is a light yet creamy dish, perfect for a cozy meal. The addition of sour cream and fresh dill brings a tangy, aromatic touch, while homemade croutons add a satisfying crunch.
Ingredients:
- 2 tbsp olive oil
- 2 leeks, finely sliced (white and light green parts only)
- 2 zucchinis, chopped
- 1 medium potato, peeled and diced
- 1 clove garlic, minced
- 1 liter (4 cups) vegetable or chicken stock
- Salt and freshly ground black pepper, to taste
- 150ml (5 fl oz) sour cream
- 2 tbsp fresh dill, chopped
- For the croutons:
- 4 slices of day-old bread, cubed
- 2 tbsp olive oil
- 1 tsp dried thyme or oregano
- Salt and pepper, to taste
Method:
- Make the Croutons:
- Preheat the oven to 180°C (350°F).
- Toss the bread cubes with olive oil, thyme (or oregano), salt, and pepper in a bowl until evenly coated.
- Spread the bread cubes on a baking sheet and bake for 10-15 minutes, or until golden and crispy. Set aside.
- Cook the Vegetables:
- Heat olive oil in a large pot over medium heat. Add the sliced leeks and cook for 5-7 minutes until softened, stirring occasionally.
- Add the minced garlic and cook for another minute until fragrant.
- Add the chopped zucchini, diced potato, and vegetable (or chicken) stock. Season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the vegetables are tender.
- Blend the Soup:
- Using an immersion blender (or transferring the soup in batches to a regular blender), blend the soup until smooth and creamy.
- Stir in half of the sour cream and chopped dill. Adjust the seasoning with salt and pepper as needed.
- Serve:
- Ladle the soup into bowls. Swirl a dollop of the remaining sour cream on top and sprinkle with the remaining fresh dill.
- Garnish with homemade croutons and serve immediately.
