Quick Fish Gratin

This Quick Fish Gratin is your go-to for a fast, flavorful, and low-calorie meal! With tender fish and a crispy topping, it’s perfect for a healthy dinner that doesn’t compromise on taste.
- Ingredients:
- 20g cornflour
- 300ml semi-skimmed milk
- 300g mixed fish (smoked haddock, cod, salmon), thawed if frozen
- 50g baby spinach leaves
- Zest of ½ small lemon (optional)
- 1 thin slice white or brown bread
- 15g Parmesan, finely grated
- Sea salt and freshly ground black pepper
- 100g frozen peas (to serve)
- Method:
- Prepare the Sauce: Mix cornflour with 3 tbsp of milk to form a paste. Heat the remaining milk in a non-stick saucepan, adding fish, spinach, and lemon zest (if using). Season with salt and pepper. Simmer gently for 3–4 minutes, until fish starts to flake.
- Thicken the Sauce: Stir in the cornflour paste and cook for 1 minute until thickened. Spoon into a flameproof dish or individual pie dishes.
- Add Topping: Preheat the grill to high. Tear bread into small pieces, toss with Parmesan, and scatter over the fish mixture. Grill for about 2 minutes until the topping is golden and crisp.
- Cook Peas: Boil peas according to packet instructions, then drain.
