Glamorgan Sausages

Meat-free option

Craving some comforting vegetarian fare? These Glamorgan Sausages are a delicious twist on a classic, packed with the flavors of leeks and cheese. Perfectly crispy on the outside and flavorful on the inside, they’re a fantastic meat-free option that’s sure to satisfy!
  • Ingredients:
For the Sausages:
  1. 25g/1oz butter
  2. 115g/4oz leeks, finely sliced
  3. 175g/6oz fresh white breadcrumbs
  4. 2 tbsp chopped fresh parsley
  5. 1 tbsp chopped fresh thyme
  6. 150g/5oz Caerphilly cheese or Welsh cheddar, finely grated
  7. 2 free-range eggs, separated
  8. 1 tsp English mustard
  9. ½ tsp flaked sea salt
  10. 5 tbsp sunflower oil
  11. Freshly ground black pepper
For the Red Onion and Chilli Relish:
  1. 2 tbsp sunflower oil
  2. 2 medium red onions, finely sliced
  3. 1 red chili, finely chopped
  4. 2 garlic cloves, crushed
  5. 75g/2½oz light brown muscovado sugar
  6. 5 tbsp white wine vinegar
  • Method:
  1. Prepare the Sausages: Fry leeks in butter until very soft. Mix with breadcrumbs, herbs, and cheese. Combine with egg yolks and seasonings. Shape into sausages, coat in egg white and breadcrumbs, and chill.
  2. Make the Relish: Sauté onions until soft, then add chili, garlic, sugar, and vinegar. Simmer until thick and glossy.
  3. Cook the Sausages: Fry sausages in oil until golden and crisp. Serve with the relish and thinly sliced runner beans if desired.
