- Ingredients:
- 4 braising steaks (about 200g/7oz each)
- 3 tbsp sunflower oil
- 1 onion, halved and cut into wedges
- 1 garlic clove, crushed
- 500ml/18fl oz beef stock (made with 1 beef stock cube or fresh)
- 1 tbsp tomato purée
- 1 tbsp fresh thyme (or ½ tsp dried thyme)
- 1 bay leaf
- 1 tsp cornflour
- ½ tsp English mustard powder
- Salt and freshly ground black pepper
- Method:
- Preheat the oven to 170C/150C Fan/Gas 3.
- Prepare the beef: Season steaks with salt and pepper. Heat 1 tbsp oil in a frying pan and brown steaks on both sides. Transfer to a large casserole dish.
- Cook the vegetables: Add more oil if needed and sauté onion until softened. Add garlic and cook for 1 more minute. Add to the casserole.
- Make the gravy: Pour over beef stock, add tomato purée, thyme, and bay leaf. Bring to a boil, cover, and cook in the oven for 1¼–1½ hours until beef is tender.
- Thicken the gravy: Mix cornflour and mustard powder with cold water until smooth. Stir into the casserole, season to taste, and simmer on the stovetop until the gravy thickens.
- Serve: Transfer steaks to plates and spoon over the rich gravy. Serve with your favorite sides, like chips or mashed potatoes.
