Classic French Onion Soup

Hearty French Onion Soup

Warm up with this deeply savory and hearty French Onion Soup, topped with cheesy croûtons for that extra touch of indulgence! Perfect for a cozy night in or impressing guests with a comforting classic. ✨
  • Ingredients:
For the Soup:
  1. 50g/2oz butter
  2. 1kg/2lb 4oz onions, thinly sliced
  3. 2 garlic cloves, chopped
  4. 100ml/3½fl oz white wine
  5. 2 tbsp Madeira (optional, plus extra to taste)
  6. 1 litre/1¾ pint beef stock
  7. Salt and freshly ground black pepper
  8. Chopped parsley to garnish
For the Croûtons:
  1. 8 thick slices French bread
  2. 2 cloves garlic, cut in half
  3. 100g/3½oz Gruyère, grated
  • Method:
  1. Melt butter in a medium ovenproof pan. Add onions and garlic, and cook gently over low heat for 30-35 minutes until the onions are soft and dark brown.
  2. Add white wine to deglaze the pan, then stir in Madeira and beef stock. Bring to a boil, then simmer for 10-12 minutes.
  3. For croûtons, toast bread slices, rub with garlic, top with Gruyère, and grill until melted.
  4. Season the soup with salt, pepper, and additional Madeira if desired. Serve with croûtons and fresh parsley.
