Courgette Fritters with Mango Chutney Yoghurt

Looking for a quick and delicious vegetarian meal? These Courgette Fritters are perfect for a light lunch or dinner! Packed with flavor and served with a tangy mango chutney yoghurt, they’re a hit every time.
- Ingredients:
- 120g courgette, coarsely grated
- ½ tsp sea salt
- 1 large free-range egg
- ½ tsp baking powder
- 3 tbsp plain flour
- 1½ tsp ground cumin
- 50g frozen peas, thawed
- Vegetable oil, for frying
- Freshly ground black pepper
For the Mango Chutney Yoghurt:
- 2 tbsp plain yoghurt
- 1 tsp mango chutney
- Method:
- Season the grated courgette with sea salt and set aside.
- In a large bowl, whisk together the egg, baking powder, flour, and cumin. Season with black pepper.
- Squeeze the excess water from the courgette and add it to the batter along with the peas.
- Heat enough oil to cover the bottom of a frying pan over medium-high heat. Drop heaped tablespoons of the courgette mixture into the pan, flattening them with a spoon. Fry for 1–2 minutes on each side until golden-brown. Drain on kitchen paper if cooking in batches.
- For the dip, mix the yoghurt and mango chutney in a small bowl.
Serve the fritters with the mango chutney yoghurt and enjoy!
