Sausage and Red Pepper Hotpot

Spicy sausages

Craving a hearty and flavorful meal? This Sausage and Red Pepper Hotpot is your answer! An easy, all-in-one-pan dish that’s perfect for family dinners. With spicy sausages, smoky bacon, and vibrant veggies, it’s a comforting meal that’s both satisfying and colorful.
  • Ingredients:
  1. 1 tbsp sunflower oil
  2. 8 spicy pork sausages
  3. 4 rashers smoked bacon, finely chopped
  4. 1 onion, sliced
  5. 1 red pepper, cut into large chunks
  6. 1 large carrot, diced
  7. 1 garlic clove, crushed
  8. 300ml/½ pint chicken stock
  9. 400g tin chopped tomatoes
  10. 2 tbsp sun-dried tomato purée
  11. 2 fresh thyme sprigs
  12. 250g/9oz baby new potatoes, sliced into thick discs
  13. Salt and freshly ground black pepper
  14. Freshly cooked green vegetables, to serve
  • Method:
  1. Brown the Sausages: Heat oil in a large pan. Fry sausages until browned, then set aside.
  2. Cook the Bacon: Fry bacon until crispy. Remove and set aside with sausages.
  3. Sauté the Veggies: Add onion, red pepper, carrot, and garlic to the pan. Cook for 5 minutes.
  4. Simmer Together: Add stock, tomatoes, tomato purée, and thyme. Bring to a boil. Add potatoes, then return sausages and bacon to the pan. Cover and simmer for 20 minutes, then uncover and simmer for an additional 10 minutes.
Serve: Enjoy with freshly cooked green vegetables for a complete, colorful meal!
