Classic Toad in the Hole

Craving a heartwarming meal? This Toad in the Hole is the perfect comfort dish for those chilly days! Juicy sausages nestled in a golden, fluffy batter, served with rich onion gravy and garlic cabbage. A classic that’s both budget-friendly and satisfying!
  • Ingredients:
For the batter:
  1. 175g/6oz plain flour
  2. Salt and black pepper
  3. 3 free-range eggs
  4. 300ml/10fl oz milk
  5. 2 tbsp olive oil
  6. 8 sausages
For the onion gravy:
  1. 1 tbsp olive oil
  2. 2 onions, finely sliced
  3. ½ tsp English mustard
  4. 500ml/18fl oz stock (beef, chicken, or vegetable)
For the garlic cabbage:
  1. 1 Savoy cabbage, shredded
  2. ½ tbsp olive oil
  3. 2 garlic cloves, finely chopped
  • Method:
  1. Make the Batter: Sieve flour, season with salt and pepper. Mix eggs into flour, then add milk gradually, whisking until smooth. Rest in the fridge for 1 hour.
  2. Prepare the Onion Gravy: Cook onions in olive oil until golden brown, then add mustard, stock, and simmer until reduced.
  3. Cook the Sausages: Heat oven to 200°C/180°C Fan/Gas 6. Roast sausages in a hot tray with olive oil until browned.
  4. Bake the Toad in the Hole: Pour rested batter over sausages and bake for 30–35 minutes until risen and golden.
  5. Prepare Garlic Cabbage: Wilt cabbage, then add garlic and olive oil. Cook until tender.
Serve up this classic dish with a generous helping of onion gravy and garlic cabbage. Perfect for a cozy family dinner!
