Hearty Sausage Casserole

Looking for a meal that’s both comforting and satisfying? Our Sausage Casserole is perfect for warming up on chilly days! With a rich, savory sauce and plenty of sausages and bacon, it’s sure to be a hit with family and friends.
  • Ingredients:
  1. 1–2 tbsp sunflower oil
  2. 12 good-quality pork sausages
  3. 6 rashers rindless streaky bacon, cut into 2.5cm/1in lengths
  4. 2 onions, thinly sliced
  5. 2 garlic cloves, crushed
  6. ½–1 tsp hot chili powder or smoked paprika
  7. 400g tin chopped tomatoes
  8. 300ml/10fl oz chicken stock
  9. 2 tbsp tomato purée
  10. 1 tbsp Worcestershire sauce
  11. 1 tbsp dark muscovado sugar
  12. 1 tsp dried mixed herbs
  13. 2 bay leaves
  14. 3–4 fresh thyme sprigs
  15. 100ml/3½fl oz red or white wine (optional)
  16. 400g tin butter beans or mixed beans, drained and rinsed
  17. Salt and freshly ground black pepper
  18. Rice or rustic bread slices, to serve
  • Method:
  1. Heat oil in a pan and brown sausages. Transfer to a casserole dish.
  2. Fry bacon until crisp, then add to the sausages.
  3. Cook onions and garlic until soft, then add spices and cook briefly.
  4. Stir in tomatoes, stock, tomato purée, Worcestershire sauce, sugar, and herbs. Add wine or water if using.
  5. Pour the sauce over the sausages and bacon. Simmer gently for 20 minutes.
  6. Stir in beans and cook for another 10 minutes until thickened.
  7. Season with salt and pepper, and serve with rice or bread.
