Classic Cauliflower Cheese

Vegetarian Delight

A comforting classic, this Cauliflower Cheese recipe brings together tender cauliflower florets and a rich, creamy cheese sauce for a dish that’s both simple and indulgent. Perfect as a side for a vegetarian roast or as a satisfying main, this recipe will quickly become a favorite!
  • Ingredients:
  1. 1 head cauliflower, broken into large florets
  2. 40g/1½oz butter
  3. 40g/1½oz plain flour
  4. 400ml/14fl oz milk
  5. 1 tsp English mustard
  6. 100g/3½oz mature cheddar, grated
  7. Salt and freshly ground black pepper
  • Method:
  1. Preheat the Oven: Set to 190°C/170°C Fan/Gas 5.
  2. Prepare the Cauliflower: Wash thoroughly and cook in boiling salted water for 3–5 minutes until just tender. Drain in a colander.
  3. Make the Cheese Sauce: Melt butter in a heavy-based saucepan, stir in flour, and cook for 1 minute. Remove from heat and gradually add milk, stirring well. Return to medium heat, bring to a boil, and simmer for 2 minutes. Stir in mustard and two-thirds of the cheese.
  4. Assemble and Bake: Arrange cauliflower in an ovenproof dish, pour over the cheese sauce, and top with remaining cheese.
  5. Bake for 25–30 minutes until golden and bubbling.
