- Ingredients:
- 1 head cauliflower, broken into large florets
- 40g/1½oz butter
- 40g/1½oz plain flour
- 400ml/14fl oz milk
- 1 tsp English mustard
- 100g/3½oz mature cheddar, grated
- Salt and freshly ground black pepper
- Method:
- Preheat the Oven: Set to 190°C/170°C Fan/Gas 5.
- Prepare the Cauliflower: Wash thoroughly and cook in boiling salted water for 3–5 minutes until just tender. Drain in a colander.
- Make the Cheese Sauce: Melt butter in a heavy-based saucepan, stir in flour, and cook for 1 minute. Remove from heat and gradually add milk, stirring well. Return to medium heat, bring to a boil, and simmer for 2 minutes. Stir in mustard and two-thirds of the cheese.
- Assemble and Bake: Arrange cauliflower in an ovenproof dish, pour over the cheese sauce, and top with remaining cheese.
- Bake for 25–30 minutes until golden and bubbling.
